If you are worried that this dinner will take a long time to get ready, then let me prove you wrong. Chicken wrapped in bacon is one of our go-to dinners on weeknights in our household & we love it.

Ingredient list:
- chicken breast- I used 4 (dinner + lunch next day for 2), adjust as needed
- bacon rashes- usually I use 2 per chicken breast
- cheese – sliced (I use mild cheddar)
- seasoning – salt, pepper, chicken seasoning (if you have)
- dill & basil (optional)
- vegetables (whichever you like)
- potatoes
- double cream
- pesto (option)
Step 1

Turn your oven to 180C & boil full kettle of water. Take your chicken breasts and cut them horizontally and lay flat on a chopping board. Season them and rub the seasoning in.
Step 2


On one side of the chicken layout the cheese. And if you are using pesto- spread it over the cheese. Fold the other side of chicken over and the wrap it in bacon. It should stay closed, but if you want to secure it more, you can use toothpicks to pin the chicken closed. Put in oven for 40 minutes (make sure they are fully cooked before serving).
Step 3
Peal your potatoes. Cut the bigger ones in halves or thirds. Rinse in sink to get the starch off, then add the boiled water. This way they will cook much quicker. I usually put these on when chicken has 20 minutes left. I put the vegetables on at the same time, using the boiled water.
Step 4

In our house- we really like half mashed potatoes. Make sure they are fully boiled, once drained, add butter, seasoning and some double cream to the pot. Stir it all up. Add basil & dill.
Step 5

Leave the chicken in the oven while you get the potatoes and vegetables ready. Make sure the chicken is fully cooked. Time to serve up your chicken wrapped in bacon with creamy potatoes & veggies. Enjoy!!
