I am all for quick & easy recipes. So I was super excited to spend 15 minutes and create 3 different healthy snacks that will last me the whole week. These are all nut & dried fruit snacks- so if you are allergic to any of these, please do not make & eat these. Ok, let me share my easy snack recipe with you.
We will be making the following snacks: Chocolate Orange, Bakewell Tart and Salted Caramel Flavours. For each flavour we will make 120grams worth of mix, that we will then mould into bite size snacks. These are also gluten free.
Here are all the ingredients you will need (for all three):
- 115g Cashews
- 175g Dates
- 60g Raisins
- 20g Peanuts
- 10g Cocoa Powder
- 1tsp Orange Essance
- 1st Almond Essance
- 1tsp Salted Caramel Essance
- dash of olive oil (if needed)
- pinch of sea salt
#1 Chocolate Orange Snack Bars (120g total / split into 4 bars)
Add 50g cashews, 50g dates, 15g raising, 10g cocoa powder and 1tsp orange essence into food processor. Either turn your food processor on or pulse it until all ingredients have been chopped up and mixed together. Stop and check the mix if it is sticking together, if not ad a little splash of olive oil.
Empty the mix on your work surface, flatten it out and cut it into 4 snack bars.
#2 Bakewell Tart Flavoured Snack Balls (120g total / split into 6 balls)
Add 60g dates, 45g cashews, 20g raisins & 1 tsp almond essence into your food processor. Blend until all has been chopped up and combined. Empty the mix on your work surface and mould these into 6 snack balls.
#3 Salted Caramel Squares (120g total/ split into 10 squares)
Add 65g dates, 25g raisins, 20g peanuts, 20g cashews, 1tsp salted caramel essence and a pinch of sea salt. Blend it all in the food processor until combined. Empty the mix on your work surface, flatten it out into a big rectangle and cut it into squares. Make sure you don’t add too much salt.
The reason why I have really fallen in love with this easy snack recipe is- that it is super easy to modify. You can change whatever shape you want your snacks to be. If you want to make a big batch of these, just increase the ingredients proportionality and you will be fine. If there are any flavours I’ve detailed you don’t like- skip them and make yours without any. Or if you want something quite subtle, add little vanilla essence.
To make sure these don’t melt (or your dogs don’t get to them), I kept them in the fridge.
