Vegan Cookie Recipe
- Stand or hand mixer
- 250 g Vegan butter
- 200 g Caster sugar
- 450 g Plain flour
- 1 large Egg equivalent of egg replacement
- 1 tbsp Vanilla extract
- Mix the softened butter and caster sugar until light & fluffy
- Add the egg replacement & vanilla extract, mix until combined
- Fold in your plain flour by hand and then kneed the dough until all combined
- Roll the dough & cut out your cookies
- Bake in a 180°C pre-heated oven for 6-8 minutes
Right, so this was one of my first attempts at vegan baking & I think it turned out pretty good. But I’ve got a little secret for you! I decorated my cookies with marshmallow fondant! Yes, yes, yes! I know, marshmallow isn’t vegan. But I really love marshmallow fondant, it tastes much better than normal sugary fondant. Plus – it’s fun to make.
If you want to keep these 100% vegan, you can leave them undecorated (because the taste is all you need) or use some icing to decorate as you wish!
So.. if you aren’t fully vegan, do give this a go, because it’s delish!
Ingredients (this made me 490grams of fondant)
- 100g marshmallow (depending what colour you’re making you might want to just use white or pink, or both)
- 200g icing sugar
- 2 tbsp water
- Golden syrup (gluing fondant to cookies)
Put the marshmallow and water in a heatproof bowl & put it in microwave for 30 seconds. Check if the marshmallow has melted, if you need more, add another 20-30 seconds.
Fold & mix the icing sugar in with a silicone spatula. When it starts to get too sticky & hard to mix, tip it out on a clean work surface and kneed with your hands. Make sure you have extra icing sugar to dust your hands and extra for the fondant if needed.
Kneed it all together until you have a nice, smooth finish to the fondant.
Before rolling the fondant, make sure you dust the work surface and your rolling pin, to prevent it sticking to them. I you want to add a bit more fun to your decorating- try adding some food colouring to get different coloured fondants. And now all the fun starts! Roll the fondant & cut out your cookie shapes.
While using a brush dap a bit of golden syrup on your cookies and then attach your cut out fondant shapes. You can then decorate the fondant with extra decorating sprinkles.
And did I mention that before you put the cookies in the oven you can cut a little whole at the top & use these as Christmas tree decorations? How cool is that?
