I am sure you have seen ready stuffed peppers in your local supermarket and wondered if they taste any good. Well, wonder no more, because I’ve got just the recipe for you to try at home. It is delicious and completely vegan.
Ok, let’s jump into the recipe!
Stuffed Peppers Recipe (2 people)
Ingredients:
- 2 whole peppers
- 1 small/ medium onion
- 1-2 garlic cloves or garlic paste (1tsp)
- 200g vegan mince (I used Beyond Meat, it’s the best one out there)
- 50g vegan cheese
- tomato paste (2tbsp)
- salt
- pepper
- cumin (start with 1 tsp and add a bit more if you want stronger taste)
I served these with mash potato and some salad.

Step-by-step
Pre-heat your oven to 180C.
- Put some olive oil in a frying pan on a medium heat to warm up.
- Peal, chop and fry your onion until soft.
- Add the mince, garlic & seasoning. Fry until the mince is starting to brown up.
- Once the mince has cooked and is nice & brown, add the tomato paste. Turn the heat off and let it sit there for a minute.
- Make sure you wash your peppers beforehand. Cut them in half, take out all the seeds. Put them on baking try and fill it with the mice mix from the frying pan.
- Grate the cheese and spade it out over all 4 halves.
- Bake in the oven for 10-15minutes until cheese has melted and peppers have softened.
If you don’t like mash, you can have some chips or just salad with these.
I’ve only ever have made stuffed peppers once or twice before, as I had this thought that it takes a long time to make them. But it doesn’t. This one is an easy recipe, using very few ingredients. If you have read some of my other recipes, you will notice – that all my recipes can be carnivore friendly as well.
So my Agate Top Tip for this week is – don’t be scared or intimidated by a recipe or anything of a fear of how long it’ll take. As the saying goes – the time will pass anyway!
