Crunchy vegan flapjack recipe might not be one you go for as your first choice, but bear with me. This one is easily covered to be a traditional chewy flapjack recipe. My husband does not eat any of my bakes, unless it’s a Bakewell tart. So I tried to make some flapjacks- as these are his go-to snacks! He was not a fan of them being crunchy!
Ok, here are the handful of ingredients needed:
- 200g oats (I used gluten free oats)
- 110g vegan butter
- 110g brown sugar
- 2tbsp maple syrup for crunchy or golden syrup if you want them chewy
Pre-Heat your oven to 180C
Put all ingredients in mixing bowl and mix together. If you are using a stand mixer you can use dough attachment to mix it. And the last bit you’ll need to do it by hand.
Put baking paper on a baking tray, and form the shape by hand. The mix will be very easily mouldable and it won’t run off the side.
Bake in oven for about 15 minutes. You want it to be slightly underbaked so it doesn’t turn to stone. Once it starts to cool it will harden up.
When the flapjack has cooled, cut it up in big or small squares. Whichever way you like to have your snacks!
Before I attempted making flapjacks, I always thought that the recipe will be difficult. It really wasn’t. I am 100% sure there are really fancy vegan flapjack recipes out there and they are delicious! But I always like to start small, with something easy and then build myself up. Once I’m confident with what I’m doing, I’ll get more adventurous with my recipes & add more things into them.
