Gluten Free & Vegan Cake Pops

  • Hand or stand mixer
  • Cake pop mould


Cake pops

  • 50 g Vegan butter
  • 75 g Caster sugar
  • 2 egg whites use egg replacement or chickpea water
  • 1 tsp Vanilla extract
  • 110 g Soy flour
  • pinch of salt
  • 1 tsp Bicarbonate soda
  • 80 ml Almond or soy milk

Chocolate coating

  • 1-2 bars Dark chocolate (vegan or over 65% dark chocolate) 1 bar to to about half, 2 bars to do all

Butter frosting

  • 55 g Vegan butter
  • 125 g Icing sugar
  • 4 tbsp Almond or soy milk
  • 1 tsp Vanilla extract


Cake pops

  • Pre-heat your oven to 170°C
  • Add the softened butter & sugar in a bowl and mix until light & fluffy.
  • Add your egg white replacement & mix well. Add the vanilla extract after and mix until combined.
  • Meanwhile mix all your dry ingredients together.
  • Add about half of your dry ingredinets, mix a bit and then add half of your milk. Then repeat until all has been added. Clean down the sides of the bowl with spatula to make sure all has been mixed well.
  • Either use spray oil or use vegan butter to oil the mould.
  • Add about a teaspoon in each of the cake pop moulds - one side only.
  • Make sure you snap the top of the mould together with the bottom one. Go through all the cake pops and snap it together to ensure they keep the shape as the bake.

  • Bake in an oven for 12-15 minutes. Check with toothpick they're baked before taking the top mould off.

Chocolate coating (after cake pops have cooled down) I only coated about half of cake pops with this.

  • Break your chocolate in smaller pieces into a heatproof bowl. Set the bowl on top of a sauce pan filled with water, let it boil. It will slowly start to melt the chocolate.
  • Before you coat the cake pops, dip the end of the pop-stick in the chocolate and then pop it into the cake pop. I put mine in a fridge for about 15 minutes so the sticks cement into the cake pops.
  • Then- start coating them. Make sure that you have styrofoam/ box/ floral oases or anything else where you can stick the cake pop into after you dip them.
  • If you want, you can add some sprinkles on top of your cake pops.
  • Add them into the fridge to set.

Buttercream frosting

  • Mix the butter & icing sugar together.
  • Add vanilla extract & milk.
  • I used the leftover chocolate and mixed it together with my butter cream.
  • Then, with great difficulty, I coated 4 cake pops. You will need to use a spoon to help with this.
  • Add in the fridge to set.
